Under the bonnet there is what appears to be black overspray everywhere. It was the same with my Soarer. What is it, and how can it be removed?

I think you should use wax and grease remover and a toothbrush, be careful to avoid electrical connections and wipe up any excess with a cloth.

sounds like oil or exhaust leak thats caused it

Exhaust leak sounds feasible. There is no leak now, but that's not to say there was once.
As I said,it looks like black overspray (I know what oil looks like) and burnt exhaust fumes could be the go.

It's on the whole of the painted surfaces under the bonnet. It's like it was put there on purpose??? as protection or something.

Can you scrape it off? What colour is your car? Is it the same colour as it's always been?

You have a few options:

- Overspray
- Exhaust leak
- Oil leak

Exhaust and Oil leak you might be able to clean it off. If not then it might be overspray from a dodgy respray. But ill go with exhaust leak or oil leak.

i dont know without seeing it but im thinkin it had a exhaust leak at sometime,you would know if it was paint

go gentle on it........sometimes if its a bad leak,left for long period of time and the old owner didnt clean it like i did on my chrysler it stain and discolour the paint as shown in pic below i try everything prepsol,wax/grease etc wouldnt come of Bawling

I've seen people put like spray-on heatshielding shit in engine bays before.

This is really weird s**t. It is even on the paint around the boot cavity and it doesn't want to come off even with cut and polish. M'm.
